What is commonly called "black and white" might be best described as "monochrome", or one color.  It can be printed as a neutral tone, as sepia (like this example), brown, blue tone, or even quadtones that vary subtly as you move from dark to light.  One of the great advantages of digital capture is that the full color original image is always available for any treatment you like.
